  • 1 bunch Beets
  • 3 tbsp olive oil
  • salt & pepper to taste

  • Preheat oven to 425
  • Peel beets and trim both ends then slice ~ 1/4″ thick 
  • Drizzle with olive oil, salt and pepper and toss well. Place on a sheet pan lined with foil. Cover with another piece of foil and fold edges together to make a sealed ‘envelope’
  • Roast for 25-40 min.
  • Halfway through cooking, peel foil back to toss and check for doneness(look for some caramelization, they are done when fork-tender)
  • Enjoy as a side or on top of a salad, yum!

Quick and Easy way to make Baba Ghanoush

Ingredients
  

  • 1 eggplant , chopped and boiled
  • 1/4 cup tahini
  • 1/3 cup olive oil
  • salt and garlic powder to taste
  • 1-2 Lemons, juiced

Instructions
 

  • Chop eggplant long ways into quarters and then into 1 inch pieces. Boil til tender, appx 10-15 min.
  • Boil til tender, appx 10-15 min. The color will change from white to translucent when they’re fully cooked. Drain.
  • Add all ingredients to a food processor (or I like to use an immersion blender with the bowl attachment for easier clean up)
  • Adjust lemon and salt to taste.
  • Enjoy with your favorite dipping veggies or pita bread or crackers.
