This recipe is a great make-ahead dish and can be eaten as a salador you can also wrap it with sticky rice and nori sheets for a delicious veggie roll!
1cucumber- sliced thin
1bunch carrot- shredded or slice super thin
1.5tspmirin
1.5tsprice vinegar
2tspagave
2tbssesame oil
2tbssoy sauce
sesame seeds for garnish
Instructions
Wash and peel carrots. Using a grater, mandolin, or peeler, cut carrots in fine slices (carefully!). Cut cucumbers into fine slices. Whisk remaining ingredients together in a small bowl then mix with veggies.
Let sit in refrigerator for 1hr or more for flavors to meld. *Fun to eat with chopsticks
