Roasting the rainbow carrots helps the flavors caramelize and adds sweetness

Ingredients

bunch carrots

TBS
olive oil

tsp.
kosher salt
Instructions
Set the oven to 400°F.
Put the carrots on the cutting board cut them in halves or lengthwise (or quarters depending on thickness of carrots)
Move carrots to baking sheet and add the oil and salt and rub the oil and salt on the carrot pieces until they're all lightly coated with oil.
Place the baking sheet into the oven and bake until the carrots are tender and golden brown, about 30 minutes. Toss midway through
Serve right away.
