Preheat oven to 425
Peel beets and trim both ends then slice ~ 1/4″ thick
Drizzle with olive oil, salt and pepper and toss well. Place on a sheet pan lined with foil. Cover with another piece of foil and fold edges together to make a sealed ‘envelope’
Roast for 25-40 min.
Halfway through cooking, peel foil back to toss and check for doneness(look for some caramelization, they are done when fork-tender)
