- Cut zucchini into 1/4″ round slices. 
- Sautee in a med-hot pan until golden brown on one side. 
- Flip each piece and continue cooking until you have a nice golden brown color on both sides. 
- While warm, blend carefully with vegetable broth, salt and pepper to taste. 
- You can add a small handful of spinach here to intensify the green color too. 
- Serve warm.
