Heat oil over medium heat in a large pan.
Saute carrots for 3 minutes stirring regularly, add snap peas and cook for approximately 6 minutes stirring frequently.
You can add a lid a couple minutes at a time to speed up the cooking process.
Once veggies are all mostly cooked add leafy greens and cook until wilted.
Drizzle soy sauce over the top, give it a final stir and serve warm.
