Remove green tops from the beets (and use them for another recipe- they're delicious!!); wash beets, peel , and chop into very small pieces, about the size of jelly beans or smaller.
In a medium pot add all ingredients, cover, and bring to a boil.
Reduce heat and simmer for 15-18 minutes until quinoa is fully cooked.
Enjoy your pink quinoa and top with any of your favorite ingredients like slivered almonds, crumbled goat cheese, etc etc
