Ingredients
  

  • [ best with whatever seasonal veggies you have available :)]
  • 1 head broccoli cut into florets; stems peeled and chopped
  • 1 bag peas ends trimmed
  • 3 carrots and or celery stalks sliced into 1/2" pieces
  • 2 stalks green garlic sliced in rings
  • 1/2 " ginger minced
  • 1 bag baby spinach
  • 1/4 cup toasted cashews
  • 1 Tsp Sesame oil
  • 3 Tbs cooking oil
  • soy sauce to taste

Instructions
 

  • Rinse and chop all veggies.
  • In a large pan over medium heat, add 3tbs oil + 1 tsp sesame oil.
  • Sautee ginger and garlic over medium heat for 1 minute.
  • Add broccoli, peas, carrots/celery and cook over med-high heat until tender, about 6 minutes. (Optional- pan with lid will reduce cooking time).
  • ***If ingredients start to stick to the pan, add 1 Tbs of water at a time over to pan***
  • Add baby spinach (or chard, chopped) and cook until completely wilted.
  • Add the soy sauce, tasting for salt as needed. Or teriyaki sauce is great too!!
  • Serve warm with rice
