Ingredients
- [ best with whatever seasonal veggies you have available :)]
- 1 head broccoli cut into florets; stems peeled and chopped
- 1 bag peas ends trimmed
- 3 carrots and or celery stalks sliced into 1/2" pieces
- 2 stalks green garlic sliced in rings
- 1/2 " ginger minced
- 1 bag baby spinach
- 1/4 cup toasted cashews
- 1 Tsp Sesame oil
- 3 Tbs cooking oil
- soy sauce to taste
Instructions
- Rinse and chop all veggies.
- In a large pan over medium heat, add 3tbs oil + 1 tsp sesame oil.
- Sautee ginger and garlic over medium heat for 1 minute.
- Add broccoli, peas, carrots/celery and cook over med-high heat until tender, about 6 minutes. (Optional- pan with lid will reduce cooking time).
- ***If ingredients start to stick to the pan, add 1 Tbs of water at a time over to pan***
- Add baby spinach (or chard, chopped) and cook until completely wilted.
- Add the soy sauce, tasting for salt as needed. Or teriyaki sauce is great too!!
- Serve warm with rice
