This yummy and healthy breakfast dish is a great party dish or a make ahead breakfast. Seasonal fruits make this dish shine!
Ingredients
- 2 cups oats
- 1-2 cups chopped fruits of choice - strawberry pear, apple, banana, blueberry, peach, etc.
- 1/3 cup brown sugar or maple or coconut palm sugar
- 3 Tbs Chia seeds
- 1 tsp baking powder
- 1 tsp Cinnamon
- 1/2 tsp Cardamom
- 1 tsp vanilla
- 1/4 cup almond butter or similar at room temperature/soft
- 2 eggs
- 2 cups oat milk or similar
- Small dash sea salt
- Chopped pecans to top optional
Instructions
- Preheat oven to 350
- Chop fruit and put into Pyrex (appx 8x10 size)
- In a large bowl, mix oats with baking powder and chia seeds
- Pour oat mixture over fruit and mix gently
- In the empty bowl, whisk eggs, oatmilk, almond butter, cinnamon, vanilla, cardamom & Sea salt until we’ll mixed
- Pour wet mixture over casserole dish and gently stir until liquid is all settled and the oats are soaked evenly
- Bake for 30-35 minutes or until firm
- Serve warm in squares. Also can refrigerate or freeze squares then reheat for a quick and healthy breakfast!
