Ingredients
  

  • Carrot Sesame Cucumber salad
  • This recipe is a great make-ahead dish and can be eaten as a salad or you can also wrap it with sticky rice and nori sheets for a delicious veggie roll!
  • 1 cucumber- sliced thin
  • 1 bunch carrot- shredded or slice super thin
  • 1.5 tsp mirin
  • 1.5 tsp rice vinegar
  • 2 tsp agave
  • 2 tbs sesame oil
  • 2 tbs soy sauce
  • sesame seeds for garnish

Instructions
 

  • Wash and peel carrots. Using a grater, mandolin, or peeler, cut carrots in fine slices (carefully!). Cut cucumbers into fine slices. Whisk remaining ingredients together in a small bowl then mix with veggies.
  • Let sit in refrigerator for 1hr or more for flavors to meld. *Fun to eat with chopsticks
