Ingredients
- 1 piece of salmon cooked
- 2 cups of leafy greens
- 1/4 cup cooked quinoa
- 1/4 cup finely sliced fennel
- 1 tangerine segmented
- 1 small radish thinly sliced
for the dressing:
- juice of 1 orange or tangerine
- 1 tsp agave
- 1 tsp white basalmic
- 1 TBS olive oil
- dash of salt and pepper
Instructions
- While Salmon is cooking, use a mandolin to thinly slice fennel and radish.
- Break apart tangerine into slices.
- Mix dressing ingredients and adjust to taste.
- Assemble bowl with leafy greens, quinoa, salmon, veggies, tangerine and pour dressing on top.
