Roasting the rainbow carrots helps the flavors caramelize and adds sweetness
Ingredients
- 1 pound bunch carrots
- 2 TBS olive oil
- 1/2 tsp. kosher salt
Instructions
- Set the oven to 400°F.
- Put the carrots on the cutting board cut them in halves or lengthwise (or quarters depending on thickness of carrots)
- Move carrots to baking sheet and add the oil and salt and rub the oil and salt on the carrot pieces until they're all lightly coated with oil.
- Place the baking sheet into the oven and bake until the carrots are tender and golden brown, about 30 minutes. Toss midway through
- Serve right away.
