Ingredients
- 1 head butternut/ pumkpin /kabocha/ or two delicata squash
- 1 leek or onion chopped
- 2-3 sweet peppers
- 2 carrots
- 2-3 to matoes
- 4 heaping Tbsp tomato paste
- 4-5 garlic cloves
- 1 tbsp Olive oil
- 3-4 cups of water
Instructions
- Simply roast everything except paste, in the oven at 350 degrees until soft and slightly brown. Transfer to a pot and add the paste and then water. Blend with an immersion blender. Then bring to a boil and let simmer for like 5-10 min. Add salt pepper, thyme, oregano, basil or whichever herbs you prefer!
