Ingredients
- 1 head cauliflower chopped
- 2 teaspoons extra-virgin olive oil divided
- 3 tbs butter or earth balance
- 1/2 teaspoon salt
- Freshly ground pepper to taste
- Snipped fresh chives for garnish
Instructions
- Place cauliflower in pan with water. Bring to boil and cook 12 to 15 minutes until fork-tender.
- Drain water and return to pot and add 2 teaspoons oil, butter, salt and pepper; Use immersion blender to process until smooth and creamy. [ or do this step in a food processor]
- Taste to see if it needs more butter or salt, or you can also add 1/3 cup of buttermilk or soymilk to make it extra creamy
- Transfer to a serving bowl serve warm
