Ingredients
- olive oil spray
- 1 large leek
- 1/2 cup mushrooms sliced fine
- 2 eggs
- salt and pepper
- optional: crumbled goat cheese
Instructions
- Preheat oven to 400.
- Slice leeks in half lengthwise, make sure to rinse out any dirt, then cut into half moon pieces. Cut Mushrooms into equally small pieces.
- Arrange on a baking sheet over parchment paper or a silicone mat. Spray veggies with olive oil, and sprinkle with salt and pepper
- Bake for appx 12 minutes until they are starting to just barely get brown.
- Toss veggies with tongs, then move around to create 2 nests for your eggs
- Crack eggs into position and return pan to oven for appx 10 minutes until eggs are completely set.
- Sprinkle crumbled goat cheese on top and serve.
Notes
You can double or triple this recipe! I used a small toaster oven pan to just make two eggs, but 8 eggs would be ideal for a full sized sheet pan.
