Ingredients
  

  • 1 pound zucchini sliced
  • 2 tbs butter or ghee
  • 1-2 cups vegetable broth
  • salt and pepper to taste

Instructions
 

  • Cut zucchini into 1/4″ round slices.
  • Sautee in a med-hot pan until golden brown on one side.
  • Flip each piece and continue cooking until you have a nice golden brown color on both sides.
  • While warm, blend carefully with vegetable broth, salt and pepper to taste.
  • You can add a small handful of spinach here to intensify the green color too.
  • Serve warm.
