
Ingredients
- 4 carrots cut into rounds
- 1 box of snap peas tip trimmed
- beet greens or spinach chopped
- 2 + TBS Olive oil or other cooking oil
- soy sauce
Instructions
- Heat oil over medium heat in a large pan.
- Saute carrots for 3 minutes stirring regularly, add snap peas and cook for approximately 6 minutes stirring frequently.
- You can add a lid a couple minutes at a time to speed up the cooking process.
- Once veggies are all mostly cooked add leafy greens and cook until wilted.
- Drizzle soy sauce over the top, give it a final stir and serve warm.
