Ingredients
- Carrot Sesame Cucumber salad
- This recipe is a great make-ahead dish and can be eaten as a salad or you can also wrap it with sticky rice and nori sheets for a delicious veggie roll!
- 1 cucumber- sliced thin
- 1 bunch carrot- shredded or slice super thin
- 1.5 tsp mirin
- 1.5 tsp rice vinegar
- 2 tsp agave
- 2 tbs sesame oil
- 2 tbs soy sauce
- sesame seeds for garnish
Instructions
- Wash and peel carrots. Using a grater, mandolin, or peeler, cut carrots in fine slices (carefully!). Cut cucumbers into fine slices. Whisk remaining ingredients together in a small bowl then mix with veggies.
- Let sit in refrigerator for 1hr or more for flavors to meld. *Fun to eat with chopsticks
