Dark green vegetables are powerhouse of vitamins including A, C, K and folate, as well as the minerals iron and calcium. They low in calories and high in fiber which help promote the feeling of fullness and help lower cholesterol by binding it in the gastrointestinal tract.  Also, high-fiber foods help control blood sugar by slowing the absorption of their naturally occurring sugars into the blood stream. It has been found that a daily serving of leafy greens may help slow cognitive decline that can come with aging. Leafy greens for longevity, hooray!

Here are four of the EASIEST ways we’ve discovered to incorporate greens into a diet daily.

1. Combine with soup or pre-made meals

    • Add two heaping handfuls of spinach to a pot of water and gently steam
    • Then add in pre made curry, lentils, noodles, or soup

2. Steam some greens for breakfast with your favorite protein

    • To a steamer basket add sliced spinach, chard, or kale along with frozen sausage
    • This also works great for a lunch or dinner with dumplings or pot stickers

3. Boil with the pasta while it cooks!

    • Cook pasta and add ribbon-sliced chard or kale to the water in the last 3 minutes while the pasta cooks
    • Drain and serve with your favorite sauce

4. Another easy breakfast!

    • Sauté sliced greens in olive oil until tender, then add scrambled eggs and cheese

Ingredients
  

  • 1 bag baby spinach chopped, or 1 bunch chard, stems removed and chopped into ribbons
  • 6 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 dash garlic powder
  • 4 ounces shredded pepper jack cheese
  • 1 avocado sliced
  • 4 whole-wheat tortillas
  • Hot sauce

Instructions
 

  • Spray a nonstick skillet over medium-high heat.
  • Add spinach and cook, stirring, until wilted, 2-4 minutes.
  • Whisk together eggs in a small bowl with salt, pepper and garlic powder. Add eggs to skillet and cook, stirring, until cooked through, 3-4 minutes.
  • Place 1/4 of egg mixture in the center of each tortilla, and sprinkle with 1 ounce cheese.
  • Top with 4 slices avocado and fold into a burrito.
  • Slice in half and serve.
