Ingredients
- Eightball Squash or Zucchini
- 1 pound ground turkey
- 1 medium onion
- 1/2 cup chopped mushrooms carrots or other veggie
- taco spice blend: cumin corriander, paprika...
- 1 1/2 TBS worstchestire sauce
- 1 1/2 TBS tsp soy sauce
- Sea salt
- 2/3 cup shredded cheese Divided
- 1/4 cup bread crumbs
Instructions
- Scoop out seedy center from squash and set aside [ for long zucchini , cut in half first, for round zucchini, cut top off first].
- Preheat oven to 375.
- In a large pan over medium heat, saute onions in olive oil until translucent. Add other veggie and stir.
- Then add Turkey, Worcestershire & sauce, soy sauce and cook, stirring frequently until the meat is cooked all the way through.
- Turn off heat and sprinkle half of shredded cheese over the top of the turkey mix.
- Stuff the squash with the turkey mix then top with cheese and breadcrumbs.
- Cook for approximately 35 minutes until squash is fork tender and cheese is golden on top.
