Ingredients
  

  • 2 carrots chopped small
  • 2 zucchini chopped small
  • 1 onion minced
  • 1 cup rice
  • 2 cups water
  • 2 tbs tomato paste
  • 1 tbs taco spice
  • 1 tsp salt
  • 2 tbs olive oil

Instructions
 

  • In a small pot and olive oil and sautee onions for 2 minutes. Then add carrots and zucchini and give it a swirl.
  • Add water and bring the pot to a boil.
  • Add rice and tomato paste a seasoning, stir to incorporate then reduce to a low simmer for 15 minutes.
  • Fluff with a fork before serving.
