Ingredients
- 2 carrots chopped small
- 2 zucchini chopped small
- 1 onion minced
- 1 cup rice
- 2 cups water
- 2 tbs tomato paste
- 1 tbs taco spice
- 1 tsp salt
- 2 tbs olive oil
Instructions
- In a small pot and olive oil and sautee onions for 2 minutes. Then add carrots and zucchini and give it a swirl.
- Add water and bring the pot to a boil.
- Add rice and tomato paste a seasoning, stir to incorporate then reduce to a low simmer for 15 minutes.
- Fluff with a fork before serving.
