
Ingredients
- 1 bunch beets tops remove
- 3 TBS olive oil
- salt and pepper to taste
Instructions
- Preheat oven to 425
- Peel beets and trim both ends then slice ~ 1/4″ thick
- Drizzle with olive oil, salt and pepper and toss well. Place on a sheet pan lined with foil. Cover with another piece of foil and fold edges together to make a sealed ‘envelope then ’Roast for 25-40 min.
- Halfway through cooking, peel foil back to toss and check for doneness(look for some caramelization, they are done when fork-tender)
- Enjoy as a side or on top of a salad, yum!
