Ingredients
  

  • 1 bunch beets tops remove
  • 3 TBS olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 425
  • Peel beets and trim both ends then slice ~ 1/4″ thick 
  • Drizzle with olive oil, salt and pepper and toss well. Place on a sheet pan lined with foil. Cover with another piece of foil and fold edges together to make a sealed ‘envelope then ’Roast for 25-40 min.
  • Halfway through cooking, peel foil back to toss and check for doneness(look for some caramelization, they are done when fork-tender)
  • Enjoy as a side or on top of a salad, yum!
