Ingredients
  

  • 1 bunch kale
  • 2 medium sweet potatoes chopped roasted
  • 1/2 cup pomegranate seeds click here for trick to remove seeds
  • 1/2 ripe avocado
  • dash sea salt
  • 1 TBS olive oil

for the dressing

  • 2 TBS maple syrup
  • Juice of 1 orange
  • sea salt
  • 1 tsp red wine vinegar

Instructions
 

  • Remove kale from stem and slice into fine ribbons.
  • Massage kale with olive oil and set salt and set aside for 5 minutes.
  • Mix dressing ingredients together, adjust to taste.
  • On top of kale add roasted sweet potato, pomegranate seeds, avocado.
  • Toss with dressing.
