Ingredients
- 1 bunch kale
- 2 medium sweet potatoes chopped roasted
- 1/2 cup pomegranate seeds click here for trick to remove seeds
- 1/2 ripe avocado
- dash sea salt
- 1 TBS olive oil
for the dressing
- 2 TBS maple syrup
- Juice of 1 orange
- sea salt
- 1 tsp red wine vinegar
Instructions
- Remove kale from stem and slice into fine ribbons.
- Massage kale with olive oil and set salt and set aside for 5 minutes.
- Mix dressing ingredients together, adjust to taste.
- On top of kale add roasted sweet potato, pomegranate seeds, avocado.
- Toss with dressing.
