Ingredients
  

  • 2 cup cucumber diced small
  • 2 cup yellow nectarine or peach diced small
  • 2 ears of corn kernals- raw or blanched
  • 1/2 cup onion diced small
  • 2 TBS jalapeño or other pepper seeds removed, diced fine
  • 3 TBS fresh cilantro chopped
  • 1/2 TBS olive oil
  • Juice of 1/2 lemon
  • 1/4 tsp white vinegar
  • salt and pepper to taste

Instructions
 

  • Finely chop cucumber, onion, peaches and pepper.
  • In a large bowl and corn + chopped veggies. Mix all ingredients until thoroughly combined
  • Adjust seasoning to taste and serve with chips or on top of tacos
