Ingredients
- 2 cup cucumber diced small
- 2 cup yellow nectarine or peach diced small
- 2 ears of corn kernals- raw or blanched
- 1/2 cup onion diced small
- 2 TBS jalapeño or other pepper seeds removed, diced fine
- 3 TBS fresh cilantro chopped
- 1/2 TBS olive oil
- Juice of 1/2 lemon
- 1/4 tsp white vinegar
- salt and pepper to taste
Instructions
- Finely chop cucumber, onion, peaches and pepper.
- In a large bowl and corn + chopped veggies. Mix all ingredients until thoroughly combined
- Adjust seasoning to taste and serve with chips or on top of tacos
