Ingredients
  

  • 1 pound zucchini
  • 2 TBS olive oil
  • a dash of salt and pepper
  • 1 TBS fresh or 1tsp dried thyme

Instructions
 

  • Slice zucchini into large pieces.
  • Toss with olive oil, salt and pepper and thyme.
  • Cook for appx 15-20 min or until golden brown around the edges.
