Ingredients
- 2 cup carrots finely grated
- 2/3 cup cheddar cheese grated
- 1/2 cup breadcrumbs or almond flour
- 2 eggs
- 1 tsp garlic powder
- 1 tsp salt
Instructions
- Heat your oven to 375°F and get a baking sheet ready by lining it with parchment or giving it a light coat of oil.
- In a mixing bowl, add the grated carrot, egg, cheese, breadcrumbs, and garlic powder. Mix until the ingredients come together into a slightly sticky blend.
- Scoop about a tablespoon of the mixture at a time and gently shape it into small tot-style bites, pressing out any extra moisture so they stay intact while baking.
- Place the tots evenly spaced on the prepared baking sheet and bake for about 15 minutes, until set and lightly golden.
- Allow them to cool for a few minutes, then enjoy on their own or with your favorite dipping sauce like ketchup, BBQ sauce, or ranch.
