Ingredients
- 1 bunch carrots tops removed, rinsed chopped into 2" pieces
- 2 cups vegetable broth
- 1 can coconut milk
- 1 1/2 TBS curry powder
- 1 tbs Maple syrup
- salt & peppers to taste
Instructions
- You can puree all the ingredients in a Vitamix and allow the friction to heat up the soup, or alternatively, you can combine all the ingredients into a pot and simmer until carrots are soft. Then transfer to a blender or use an immersion blender and adjust salt & papper to taste.
- Serve warm with toasted sunflower seeds on top-mmm!
