Ingredients
- 1 bunch collard greens
- filling of choice: Recommendations
- cooked quinoa
- mashed potatoes
- basmati rice or sushi rice
- hummus
- raw veggies
Instructions
- Bring a large pot of salted water to a boil
- Use a paring knife to remove as much stem as you can without breaking the leaf part of the collard
- Once water is boiling, add leaf and cook until soft and dark green, appx 2-3 minutes
- Remove and let dry
- Fill with desired filling and roll like a burrito
