Ingredients
  

  • 1 bunch collard greens
  • filling of choice: Recommendations
  • cooked quinoa
  • mashed potatoes
  • basmati rice or sushi rice
  • hummus
  • raw veggies

Instructions
 

  • Bring a large pot of salted water to a boil
  • Use a paring knife to remove as much stem as you can without breaking the leaf part of the collard
  • Once water is boiling, add leaf and cook until soft and dark green, appx 2-3 minutes
  • Remove and let dry
  • Fill with desired filling and roll like a burrito
