Ingredients
- 1 cup bell peppers chopped into tiny pieces
- 1 cup cooked chicken breast or seitan chopped/shredded
- 1/2 cup mayo or veganaise
- 1/4 cup cranberries chopped
- 1/4 cup pecan pieces chopped
- 1/2 tsp light curry powder
- 2 tbs chopped chives or green onions
- salt and pepper
Instructions
- Rinse and bell peppers into tiny pieces and add to a large mixing bowl
- Shred the cooked chicken breast into the bowl
- Add cranberries and pecans, then toss all the ingredients together with the mayo, curry powder, salt & pepper. Stir well then fold in chives.
- Adjust mayo, curry powder, salt/pepper to taste
