What exactly are artichokes?
The artichoke is actually the flowering part of the plant! Just like Broccoli, we eat the flower before it opens. This flowering vegetable is delicious and full of vitamins and phytochemicals which have been studied to improve liver function and prevent cancer.
Are artichokes low calorie?
Yes! The artichoke is low in calories, but high in dietary fiber and antioxidants. And it’s delightful to eat. Win-win!
Does it take a long time to prepare artichokes?
It’s definitely a labor of love to cook this veggie and get to its heart but the flavor is well worth it! the good news in terms of prep is that it can be as little as a couple minutes to set up, and the about 45 minutes of letting them boil or steam on the stovetop.

How To Cook Artichokes
- Rinse and cut off the top inch of the artichoke and any pointy tips on the petals. (You can also pull off any small petals near the stem)
- Squeeze a lemon slice over each artichoke
- Place a steaming basket inside of a large sized pot and fill with water to just below the bottom of the basket.
- Place all artichoke, stems up, in the pot and cover with a lid.
- Bring water to a boil and steam the artichokes in the pot for roughly 30 minutes. (You will be able to push a knife through the base with ease similar to a baked potato when they are done or use a tongs and if the out leave easily comes off with a pull, it’s done!) Click here to see
