Carrots, Carrots Everywhere: Using LOTS of Them This Winter

If carrots are starting to pile up in your crisper drawer this time of year, you’re not imagining things. Winter is peak carrot season, and carrots are one of the few crops that thrive in cool weather with fewer hours of sunlight.. The slower winter growth actually makes them sweeter, crisper, and more flavorful—great news for eating, even if it means you suddenly have a lot of carrots on hand.

Carrots are one of the most versatile vegetables around, which makes them easy (and satisfying) to use in large quantities. Whether you’re cooking for the week, feeding a family, or just trying to clear some fridge space, here are simple, delicious ways to put those winter carrots to work.

Roast Them

Roasting is a favorite for a reason- when carrots caramelize they get even sweeter! Toss whole or chopped carrots with olive oil, salt, and pepper, then roast until caramelized and tender. From there, you can switch it up endlessly—add garlic, drizzle with honey or maple syrup, sprinkle with cumin or smoked paprika, or finish with fresh herbs.
