7 of my favorite fall recipes that are quick, warming, and delicious!

In Los Angeles it would be easy to forget we have an autumn if it weren’t for the daylight changing and the seasonal produce (and tons of pre-holiday decor) to remind us. Now that it’s autumn though, I’m very excited to enjoy warming soups and to wear cute jackets& scarves again.

Here are a few of my very favorite Fall Recipes that take as little as just a few minutes to warm up/prepare and will keep you warm and full! Click the images for the recipes.

Breakfasts

OATMEAL WITH CHIA SEEDS, SUNFLOWER BUTTER AND PERSIMMONS

Less than 5 minutes to make and so yummy!

VEGGIE-RICH CRUSTLESS QUICHE

Prep this anytime during the week, then serve refrigerated slices for a quick veggie-rich breakfast you can warm in the toaster oven

Pastas

KALE PESTO

This easy  and delicious pesto can be made with raw greens or blanched (less bitter) and besides kale you can use chard, parsley, cilantro, arugula, beets or their greens for this delicious and colorful recipe. If you don’t mind a thicker pesto, you may even use an immersion blender to save the time of cleaning the food processor. Quick & Full of Greens & YUMMY!

 PASTA SAUCE WITH WINTER SQUASH

A great recipe for using up those sweet squash and savory veggies. Make this sauce ahead of time (using leftover roasted veggies) and dinner is as quick as boiling a pot of water for pasta and serving this veggie-rich sauce on top!

Slowcooker meals

EASY SLOWCOOKER SALSA CHICKEN WITH CARROTS & FALL VEGGIES

This two step recipe is the easiest ever, literally just a few minutes of prep, that’s it! and really makes a whole meal meal!
It’s a great way to use up almost any veggie you have still in the drawer

BUTTERNUT SQUASH CHILI

So warming and yummy! This one is even great to freeze.

SLOW COOKER LENTIL + VEGGIE SOUP

This is another fantastic recipe you using up everything you still have in your veggie drawer. In addition to being full of veggies, it’s also full of protein from the lentils and it just takes a few minutes to warm up a bowl for lunch the next day, and the next day too!
